The eels are farmed in Kagoshima Prefecture, which has a warm climate suitable for eel farming, using mineral-rich groundwater and a “high-oxygen method.” Without the use of medicine, the amount of oxygen in the water is increased, which increases the eels’ appetite and results in eels with fat and flesh.
