①Material

The eels are raised in Kagoshima Prefecture, which has a warm climate suitable for aquaculture, using mineral-rich groundwater and a “high-oxygen method.” Increasing the amount of oxygen in the water increases the eels’ appetite. They eat well, so they become fatty and meaty, and grow into healthy eels without the need for medication.

② Manufacturing method

First, the skin and flesh are grilled without any seasoning. After that, it is steamed with heated steam to make it plump, and then the process of grilling with sauce is repeated four times. By grilling it slowly and repeatedly, the flavor is concentrated.

③Seasoning

The sauce is made only with sugar, mirin, soy sauce, and starch. It has a light flavor, so you can enjoy the natural taste of the eel.
